Everything your reglular lasagne has, but without the meat!
8 oz. lasagna noodles
2 cups Morningstar Farms recipe crumbles
1 1/2 cartons cottage cheese
1 jar spaghetti sauce
16 oz. shredded cheese
Cook noodles according to package directions, drain, and separate noodles. In large saucepan, pour in sauce and recipe crumbles. Bring to boil, reduce heat, and simmer for 10 minutes; take off heat.
Layer noodles in either a 9-inch square pan, or a 9 X 13 inch rectangular pan. Spread cottage cheese on noodles, sprinkle various Italian seasonings on cottage cheese, if desired. Pour recipe crumble/sauce mixture on top of cottage cheese. Layer cheese on top, then continue layering until supplies are depleted. Sprinkle cheese on very top.
Bake in 400 degree oven for 35-40 minutes until cheese is golden and lasagna is bubbling. Cool for 5-15 minutes, then cut into squares and serve. Square pan yields 9 servings; rectangular will yield 12 servings.
For the vegan reader, just substitute soy cheese for the dairy cheese.
